Preparation:
Heat the salad oil into a medium saucepan over medium heat. Add the flour and stir until it becomes brown. Add the garlic and onion, stirring from time to time until they become tender. While stirring, add the tomatoes piece by piece. Add to the mixture pepper sauce, salt, sugar, Worchestershire, and bay leaf. Break up the tomatoes and stir until the mixture boils. Leave the composition at a low heat, cover it and let the flavors combine for about 10 minutes. Add the okra and let it cook for 5 minutes. Finally, add the crab and stir gently, after which discard the bay leaf. To serve, first put the rice on the plate and then the gumbo over it. |
